Meal Card: Roasted Tomato Red Pepper Pesto Gnocchi with Peppers and Onions

Our red pepper pesto is punchy and vibrant, but not spicy, making it the perfect family-friendly condiment. We combine our flavorful pesto with tender potato gnocchi, sweet roasted tomatoes, bell peppers, and sliced onions for a meal everyone will love. 

Suvie Cook Settings

Bottom Zone: Roast at 350°F for 15 minutes for 2 servings, 25 minutes for 4 servings

Top Zone: Roast at 350°F for 15 minutes for 2 servings, 25 minutes for 4 servings

Roasted Tomato Red Pepper Pesto Gnocchi with Peppers and Onions

Ingredients

  • 10 oz gnocchi 
  • 4 oz red pepper pesto 
  • 6 oz peppers and onions
  • 4 oz roasted tomatoes

Directions

1) Run pesto under warm water to slightly thaw. Open gnocchi and pour into a Suvie pan. Squeeze pesto out of packaging over the gnocchi.

2) Open peppers and onions and roasted tomatoes packages and pour into a separate Suvie pan. Season with 1 tbsp olive oil,  ½ tsp salt and freshly ground pepper (for 4-servings, use 2 tbsp olive oil and 1 tsp salt).

3) Load gnocchi into the top zone of Suvie and peppers, onions and tomatoes into the bottom zone. Input settings and cook now. Alternatively, you can store or schedule the meal in the Suvie, but note you will need to select Cook Now to begin cooking your stored or scheduled meal. (please be sure to select “Yes” when asked if cooking from frozen).

4) When cook is complete, stir gnocchi and pesto together with a spoon. Divide between plates and top with peppers, onions and tomatoes. Season to taste with salt and pepper.
