Meal Card: Slow Cook Ratatouille with Couscous

This delicious vegetable-packed meal delivers major summertime flavor no matter the season. Grilled zucchini, eggplant, bell pepper, and onion come together under a blanket of tangy marinara sauce. The vegetables are served over tender couscous and finished with a shower of umami-rich Parmesan cheese for flavor in every bite.

Slow Cook Ratatouille with Couscous

Ingredients

  • 20 oz grilled vegetables
  • 6 oz marinara sauce
  • 8 oz couscous
  • 1 oz parmesan cheese

Directions

1) Open grilled vegetables and pour into a Suvie pan. Season with 2 tbsp olive oil, 1 tsp salt and freshly ground pepper. Open marinara sauce and squeeze out of packing on top of vegetables.

2) Open couscous packages and pour into a separate Suvie pan. Add 1 cup of water, 2 tbsp olive oil and 1 tsp of salt.

3) Load grilled vegetables and marinara into the top zone of your Suvie and the couscous into the bottom zone. Input settings and cook now. Alternatively, you can store or schedule the meal in the Suvie, but note you will need to select Cook Now to begin cooking your stored or scheduled meal (please be sure to select “Yes” when asked if cooking from frozen).

4) When the cook is complete, gently stir vegetables with marinara sauce. Divide couscous between plates and top with sauced vegetables. Garnish with parmesan cheese and season to taste with salt and pepper.
