Meal Card: Sweet Potato Buddha Bowl

Our sweet potato buddha bowl is a nutrient powerhouse that’s packed with flavor. Tender pieces of sweet potato are roasted alongside broccoli florets and mixed together with toothsome brown rice and earthy kale before being drizzled with our nutty and rich lemon tahini sauce. Whether you enjoy this dish for lunch or dinner, it’s sure to please vegetarians and meat eaters alike.

Ingredients

  • 1-2 packages roasted sweet potatoes
  • 1-2 packages broccoli
  • 1-2 packets lemon tahini sauce
  • 1-2 packages brown rice
  • 1-2 packets kale

Directions

1)  Place lemon tahini sauce in a bowl of hot water to thaw or place in the refrigerator to thaw if scheduling this meal.

2) Before opening, gently tap broccoli, sweet potato, brown rice, and kale packages on the counter to break up any large pieces. 

3) Open sweet potatoes and brown rice and place in a Suvie pan. Open broccoli and kale and place in a second Suvie pan. Season each pan with 1 tbsp olive oil, 1/4 tsp salt and freshly ground pepper (for 4 servings, season with 2 tbsp olive oil, 1 tsp salt, and freshly ground black pepper). sweet potato rice 

4) Place sweet potatoes and rice in the top zone and the broccoli and kale in the second zone. Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.

Suvie Cook Settings

Bottom Zone: Roast at 350°F for 20 minutes (for 4 servings, Roast for 30 minutes)

Top Zone: Roast at 350°F for 20 minutes (for 4 servings, Roast for 30 minutes)

5) Remove pans from Suvie, season each pan to taste with salt and pepper. Shake packet of lemon tahini sauce if it has separated. Divide ingredients between bowls and drizzle with lemon tahini sauce.
