Meal Card: Summer Peach Pork Loin

Savor the flavor of summer with our juicy pork tenderloin glazed with tangy peach compote. A side of grilled corn and roasted tomatoes adds sweet and smoky notes that complement the pork. This elegant meal is ideal for enjoying al fresco any day of the week.

Ingredients

  • 1-2 packets peach compote
  • 1-2 packages pork tenderloin
  • 1-2 packages grilled corn
  • 1-2 packages roasted tomatoes 

Directions

1) Place packet of peach compote in a bowl of hot water to thaw. If scheduling this meal, place in the refrigerator to thaw. 

2)  Open pork tenderloin and place on the Suvie roasting rack (handles facing up) set within a Suvie pan. Place pork tenderloin in the Top Zone of Suvie.

3) Tap packages of grilled corn and roasted tomatoes on the counter to break up any large pieces. Open into a Suvie pan and season to taste with olive oil, salt, and pepper. Place pan in the bottom zone of Suvie. 

4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 minutes for 2 servings (25 minutes for 4 servings)

Top Zone: Roast at 325°F for 25 minutes  (for 4 servings, Roast for 30 minutes)

5) Remove pork from Suvie, leaving corn and tomatoes in the bottom zone to keep warm. Glaze pork with peach compote and return to Suvie. Confirm 7 minute broil time. 

6) Remove pans from Suvie. Transfer pork to a cutting board and let rest for 4 minutes before slicing into medallions.

7) Season corn and tomatoes with salt and pepper to taste and then divide between plates. Divide pork between plates and serve.
