Nourishing Chicken Minestrone

Nourishing Chicken Minestrone

Ingredients

  • 2 tbsp olive oil 
  • 1 large carrot, chopped
  • ½ large yellow onion, chopped
  • 2 celery stalks, chopped 
  • 1 ½ lbs boneless, skinless chicken breasts, cubed
  • 1 (15 oz) can white beans, drained and rinsed
  • 1 (14 oz) can crushed tomatoes 
  • 6 cups chicken broth
  • 4 oz green beans, cut into 1″ lengths
  • 1 small zucchini, cut into bite sized pieces
  • 2 sprigs rosemary 
  • 2 large handfuls spinach
  • 4 tbsp shredded Parmesan cheese

Directions

1) In a large skillet, heat 2 tbsp olive oil over medium heat until shimmering. Add carrot, yellow onion, celery, and ½ tsp kosher salt. Cook, stirring often until celery is softened, about 8 minutes.

2) Season cubed chicken breasts with 1 tsp kosher salt and ½ tsp ground black pepper. Divide chicken, sauteed vegetables, white beans, crushed tomatoes, chicken broth, green beans, zucchini, and rosemary sprigs between two Suvie pans. 

3) Place pans into Suvie. → Hold the Tap to Scan tag to the logo on the appliance.

Suvie Cook Settings

Bottom Zone: Roast at 350°F for 40 minutes 

Top Zone:  Roast at 350°F for 40 minutes 

4) Remove pans from Suvie. Divide spinach between pans, stirring to submerge. Return to Suvie and confirm 5 minute broil time. 

5) Remove pans from Suive. Generously season soup to taste with salt and pepper. Divide between bowls and serve, sprinkling Parmesan over each serving.

Chef’s Tip: You can substitute diced chicken thighs or sliced chicken sausage for the chicken breast if preferred.
