This Crispy Baked Lemon Herb Fish is the perfect weeknight meal—flavorful, light, and wonderfully easy to prepare in your Suvie. Enjoy perfectly baked, herb-crusted pollock alongside creamy mashed potatoes and vibrant green peas, all finished with a bright, zesty lemon herb sauce.

Ingredients
- 1-2 packages herb breaded pollock
- 1-2 packets lemon herb sauce
- 1-2 packages potato puree
- 1-2 packages green peas
Directions
1) Place packets of lemon herb sauce in a bowl of hot water to thaw or place in the fridge if scheduling this meal. Place peas in the fridge to thaw.
2) Place herb breaded pollock in a greased Suvie pan. If cooking 4 servings you may need to stack the filets on top of each other. Place pan in the top zone of Suvie.
3) Open potatoes into a Suvie pan. Add 1 tbsp olive oil or butter (2 tbsp for 4 servings), 1/2 cup milk or water (1 cup for 4 servings) , 1/2 tsp salt (1 tsp for 4 servings), and freshly ground pepper. Place pan in the bottom zone of Suvie.
4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.
Suvie Cook Settings
Bottom Zone: Roast at 350°F for 15 minutes (for 4 servings, Roast for 20 minutes)
Top Zone: Roast at 375°F for 20 minutes (for 4 servings, Roast for 25 minutes)
5) Remove pans from Suvie. Transfer pollock to a cutting board to rest for 4 minutes. Add green peas to now-empty Suvie pan and season generously with olive oil, salt, and pepper. Place pan in the top zone of Suvie and confirm 7 minute broil time.
6) Stir mashed potatoes together and season with salt and pepper to taste. Transfer lemon herb sauce to a microwave safe bowl and heat in 30 second intervals until hot. Divide mashed potatoes, peas, and breaded pollock between plates. Drizzle with lemon herb sauce.
