Crispy Cauliflower with Fried Caper Chili Oil

Fried capers are a thing of beauty. Crunchy, briny, and a little sweet, these little morsels pull double duty in this easy and elegant side dish. The fried capers not only top the finished dish, but they also infuse the olive oil with flavor, which is then drizzled on the cauliflower before air frying. A touch of red pepper flakes add an undercurrent of heat; up the amount to ½ tsp for a bit more fire. Note: Be sure to thoroughly pat dry the capers before adding them to the oil in Step 1. 

Crispy Cauliflower with Fried Caper Chili Oil

Ingredients

  • 2 lbs cauliflower florets
  • 2 tbsp olive oil 
  • 2 tbsp capers, rinsed and patted dry
  • ¼ tsp red pepper flakes

Directions

1) Place cauliflower florets in a large, heat proof bowl with a fine mesh strainer set on top. 

2) Combine 2 tbsp olive oil, 2 tbsp capers, and ¼ tsp red pepper flakes in a small heat proof bowl. Microwave on high for 2 minutes and 30 seconds, stirring every 30 seconds until capers are crisp. 

3) Remove caper oil from microwave and pour into the mesh strainer over the cauliflower florets. Transfer capers to a paper towel lined plate to cool.

4) Season cauliflower with 1 tsp kosher salt and toss well to completely coat florets in oil. Divide cauliflower between two Suvie air fry baskets and place in Suvie, ensuring sheet pans are underneath each basket to catch any drips. Input settings and cook now or schedule, stirring cauliflower halfway through cooking

Suvie Cook Settings

Bottom Zone: Air Fry at 375°F for 35 minutes 

Top Zone: Air Fry at 375°F for 35 minutes 

5) Remove cauliflower from Suvie and transfer to a serving bowl. Top with fried capers and serve.

I think there is a typo in the recipe. It says to microwave the capers for over 20 minutes and I think it was supposed to be 2 minutes in the instructions.
