Croissant Breakfast Sausage Casserole

Wake up to a French feast with this delicious and decadent casserole. Flaky layers of croissant are baked in a rich custard studded with breakfast sausage and melty gruyere. A touch of Dijon adds a welcome tang to the luxurious filling and a sprinkle of chives adds a pop of freshness.

Ingredients

  • 4 large eggs
  • 1 cup half and half
  • 3 oz gruyere cheese, cut into thin slices
  • 3 oz precooked breakfast sausage, crumbled or chopped
  • 1 tsp Dijon mustard
  • 4 croissants (about 22 oz) 
  • 1 tbsp minced chives, to serve

Directions

1) With a serrated knife, cut croissants lengthwise into 3 pieces. Arrange pieces in a greased Suvie pan, trimming pieces to fit as necessary. Nestle cheese slices and sausage pieces between the croissant layers.. 

2) In a medium bowl, whisk together 4 large eggs. 1 cup half and half, 1 tsp Dijon mustard, ½ tsp kosher salt, and ¼ tsp ground black pepper until smooth.

3) Pour mixture over the croissants, pressing down to saturate croissants. Place pan in the bottom zone of Suvie. → Hold the Tap to Scan tag to the logo on the appliance. Rotate pan halfway through cooking. 

Suvie Cook Settings

Bottom Zone: Bake at 325°F for 30 minutes 

Top Zone: None

4) Remove from Suvie. Allow to cool 5 minutes before cutting in squares and serving with chives.

Chef’s Tip: Substitute diced ham for the breakfast sausage to play up the classic French pairing.
