Although the origin of the Frito Pie is a highly disputed topic with New Mexico and Texas both laying claim to its beginnings, one thing we can all agree on is its beautiful and delicious simplicity. Whether this dish is served in the Frito bag or in a bowl bigger than we’d like to admit, the salty crunch of the Fritos mixed with slow simmered chili is a flawless match. Top it all off with cool sour cream, freshly grated cheddar cheese, and bright green onions to bring this tried and true staple to perfection.

So good! Comfort food at its best. Super easy to throw together in the morning and schedule for the evening. Next time I think I’ll add an extra can of beans, as the recipe is written, is very beef forward and would add more variety.
It has changed our family being able to have hot meals ready at the end of busy days when you get home too late to cook.
