Lemon Garlic Chicken Thighs with Thyme Roasted Potatoes

Lemon Garlic Chicken Thighs with Thyme Roasted Potatoes

Ingredients

  • 4 bone-in, skin-on chicken thighs, trimmed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp lemon zest
  • ¼ tsp baking powder
  • 1 lb baby potatoes
  • 2 garlic cloves, smashed and peeled
  • 1 tbsp olive oil
  • 1 large sprig of thyme 
  • 1 tsp minced fresh parsley

Directions

1) Pat chicken dry with paper towels. In a small bowl, stir together 1 tsp garlic powder, 1 tsp onion powder, ½ tsp lemon zest, ¼ tsp baking powder, 1 tsp kosher salt, and ½ tsp ground black pepper. Rub mixture all over chicken thighs. Place chicken thighs skin-side down in a Suvie air fry basket. Place in the top zone of Suvie with a sheet pan underneath to catch any drips.

2) In a Suvie pan, combine 1 lb baby potatoes, 2 garlic cloves, 1 tbsp olive oil, 1 sprig thyme, 1 tsp kosher salt, and ½ tsp ground black pepper. Place pan in the bottom zone of Suvie. 

3) Input settings and cook now or schedule, flipping chicken over halfway through cooking. 

Suvie Cook Settings

Bottom Zone: Convection Roast at 400°F for 25 minutes

Top Zone: Air Fry at 400°F for 30 minutes 

4) After cooking, remove pans from Suvie. Divide chicken and potatoes between plates. Garnish with parsley just before serving.
