Meal Card: BBQ Beef Bowl with Fire Roasted Corn

Ingredients

  • 1-2 packages shredded beef
  • 1-2 packets BBQ sauce
  • 1-2 packages white rice
  • 1-2 packages Southwest vegetable blend

Directions

1) Place BBQ sauce in a bowl of hot water for 2-3 minutes to thaw. 

2) Open shredded beef and place in a Suvie pan. Cut open BBQ sauce and pour on top of the beef.

3) Before opening, tap southwest veg mix and white rice packages against the countertop to break up any large pieces. Pour into a second Suvie pan and season with 2 tbsp (4 tbsp) water, 1 tbsp (2 tbsp for 4 servings) olive oil, and 1/4 (1/2) tsp salt.

4) Input settings and cook now. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 minutes (for 4 servings, Roast for 20 minutes)

Top Zone: Roast at 350°F for 27 minutes (for 4 servings, Roast for 39) 

5) After cooking, remove beef from Suvie, leaving white rice pan in Suvie to keep warm. Use two forks to separate the beef and stir into the sauce. Season to taste with salt and pepper. Return pan to Suvie. Confirm 10 minute broil time for the beef, and cook.

6) After the broil, remove both pans from Suvie. Fluff the white rice with a fork and season to taste. Divide rice between plates and top with the beef.

My Suvie would not allow me to input the times shown above for frozen. As soon as I selected frozen, it bumped the times up to 30 min for the bottom and 45 min for the top. So that is how I will cook it. We will see what happens.
