Meal Card: Black Bean Quesadillas with Cilantro Lime Crema and Salsa

Enjoy everyone’s favorite Mexican staple, the incomparable quesadilla. Crisp flour tortillas are filled with melty pepper jack cheese and studded with black beans, charred corn, bell peppers, and onions. We serve our quesadillas with not one, but two sauces: choose from creamy cilantro lime crema or tangy tomato salsa.

Ingredients

  • 1-2 packages flour tortillas
  • 1-2 packages pepper jack cheese
  • 1-2 packages SW vegetable blend 
  • 1-2 packets cilantro lime crema
  • 1-2 packets salsa

Directions

1) Place cilantro lime crema and salsa packets in a bowl of hot water to thaw. If scheduling this meal, place sauces in the fridge to thaw. 

2) Remove tortillas from plastic and wrap in damp paper towels. Microwave on high for 30 seconds or until pliable and warm. 

3) Gently tap package of SW vegetable blend on the counter to break up any large pieces. Arrange thawed tortillas on a large cutting board. Divide pepper jack cheese and SW vegetable blend evenly between the tortillas, arranging the vegetables and cheese on one side of the tortillas. Fold tortillas in half.

4) Grease two Suvie pans. Carefully transfer quesadillas to pans, placing 3 quesadillas in each pan. Lightly grease the top of each quesadilla.  Place pans in Suvie.  Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.

Bottom Zone: Roast at 325°F for 18 minutes (for 4 servings, Roast for 25 minutes) 

Top Zone: Roast at 325°F for 18 minutes (for 4 servings, Roast for 25 minutes) 

5) Remove pans from Suvie. Transfer quesadillas to a cutting board and cut each into thirds. 

6)  Divide quesadillas between plates and serve with cilantro lime crema and salsa.
