Our classic 4-serving eggplant parm features tender pieces of fried eggplant draped in tangy marinara sauce and covered with melty mozzarella cheese. Paired with crisp green beans and a side of toasted bread, this Italian favorite is sure to please.

Ingredients
Directions
1) Place packages of mozzarella cheese on the counter to thaw, or place in the refrigerator to thaw if scheduling this meal. Place hoagie rolls on the counter to thaw. Remove plastic from eggplant parm and place tray in a Suvie pan. Place pan in the top zone of Suvie.
2) Open green bean packages into a second Suvie pan. Season with 2 tbsp olive oil and salt and pepper to taste. Place pan in the bottom zone of Suvie. Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.

Bottom Zone: Roast at 325°F for 15 minutes
Top Zone: Roast at 350°F for 40 minutes
3) Remove eggplant parm from Suvie. Top eggplant parm with mozzarella cheese and return pan to Suvie. Remove green beans from Suvie. Split hoagie rolls open, brush with olive oil, and season with salt and pepper. Wrap in foil and place in the bottom zone of Suvie. Confirm 7 minute broil time.
4) Season green beans with salt and pepper to taste. Divide eggplant parm and green beans between plates. Cut hoagies in half and divide between plates.
