Enjoy a taste of the Mediterranean with this delicious and nutritious meal. Crisp falafel are served over a bed of bulgur and quinoa filled with a medley of vegetables. Zucchini, tomatoes, chickpeas, bell peppers, sugar snaps, eggplant, and carrots add variety and color to the mix. To finish, a drizzle of nutty lemon tahini sauce ties it all together.
Meal Card: Lemon Tahini Falafel Fritters

Ingredients
- 1-2 packets lemon tahini sauce
- 1-2 packages falafel
- 1-2 packages Med grain & veg blend
- 1-2 packages Parisian carrots
Directions
1) Place packet of lemon tahini sauce in a bowl of hot water to thaw, or place in the fridge to thaw if scheduling this meal.
2) Open falafel into a Suvie pan. Place pan in the top zone of Suvie.
3) Open Med grain & veg blend and carrots into a Suvie pan. Season generously with olive oil, salt, and pepper. Place pan in the bottom zone of Suvie.
4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.
Suvie Cook Settings
Bottom Zone: Roast at 325°F for 15 minutes (for 4 servings, Roast for 20 minutes)
Top Zone: Roast at 325°F for 15 minutes (for 4 servings, Roast for 20 minutes)
5) Remove pans from Suvie. Stir Med grain & veg blend and carrots together and season to taste with salt and pepper. Divide between bowls with falafel. Drizzle lemon tahini over each serving.
