Meal Card: Salmon and Pesto Cavatappi

Fall is finally here and there’s no better time to indulge in these incredible pasta bakes! Keep it bright with our Pesto Cavatappi and Salmon, featuring flaky salmon filets over fragrant basil pesto-tossed pasta, finished with a side of grilled corn as a callback to summer.

Meal Card: Salmon and Pesto Cavatappi

Ingredients

  • 2-4 salmon filets
  • 1-2 packets basil pesto
  • 1-2 packages grilled corn
  • 1-2 packages cavatappi pasta

Directions

1) Run basil pesto under warm water to thaw. 

2) Open salmon and place on the roasting rack (handles facing up) in a Suvie pan. Season with 1 tbsp olive oil, 1/4 tsp salt and freshly ground pepper (for 4 servings, season with 2 tbsp olive oil, and ½ tsp salt). Place in the top zone of Suvie.

3) Open grilled corn and cavatappi pasta and add to a Suvie pan. Pour pesto over the pasta and corn. 

4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 minutes (for 4 servings, Roast for 25 minutes)

Top Zone: Roast at 325°F for 18 minutes (for 4 servings, Roast for 25 minutes)

5) Remove pans from Suvie. Stir pasta, corn, and pesto together; season to taste with salt and pepper. Divide pasta between bowls. Top each bowl with a salmon filet and serve.
