This easy and delicious recipe yields juicy and flavorful chicken every time. The key is to use skin-on, bone-in chicken breasts, which retain moisture better than boneless, skinless. If you prefer, you can spread the pesto under the skin and then discard it after cooking.Â
Pesto Roast Chicken Breast

Ingredients
- 1 skin-on, bone-in chicken breast
- 2 tbsp pesto, divided
Directions
1) Place chicken in a Suvie pan. Rub 1 tbsp pesto all over chicken breast. Place chicken in the bottom zone of Suvie. Input settings and cook now or schedule.
Suvie Cook Settings
Bottom Zone: Roast at 325°F for 45 minutesÂ
Top Zone: None
2) After the chicken has finished cooking, transfer to a plate or cutting board and let rest for 4 minutes. Spread remaining 1 tbsp pesto over the chicken and season to taste with salt and pepper.
