Protein Packed Baked Banana Oatmeal Bars

With a soft and tender texture, these cinnamon-laced oatmeal bars are sweetened with fresh banana and a touch of maple syrup. A combination of protein powder, eggs, and peanut butter pack a whopping 27 grams of protein into each serving. These portable bars are a great option when you’re pressed for time, but want to enjoy a nutritious breakfast that will have you sated until lunch.

Protein Packed Baked Banana Oatmeal Bars

Ingredients

  • 1 scoop protein powder  
  • 2 tsp ground cinnamon
  • ÂĽ tsp salt
  • ½ cup water
  • ½ cup milk
  • 2 large ripe bananas
  • 2 tbsp peanut butter
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup or brown sugar
  • 2 large eggs, beaten
  • 2 cups old fashioned oats

Directions

1) In a large bowl, whisk together 1 scoop protein powder, 2 tsp cinnamon, and ÂĽ tsp salt. Add ½ cup water, ½ cup milk, 1 tsp vanilla, 2 tbsp brown sugar, and whisk until smooth. 

2) In a medium bowl, mash bananas and peanut butter together until pasty. Stir in the beaten eggs. Add banana mixture to the milk mixture, whisking until smooth. Add 2 cups old fashioned oats and stir to incorporate. 

3) Transfer mixture to a greased Suvie pan. Place in the bottom zone of Suvie. Input settings and cook now or schedule. 

Suvie Cook Settings

Bottom Zone: Bake at 350°F for 30 minutes (for Suvie 2.0, Bake at 400°F) 

Top Zone: None

4) Remove pan from Suvie. Allow to cool in the pan for 5 minutes. Cut into squares and serve.
