Fresh, light, and bursting with flavor, these entree-level salads are the perfect summertime dinner. Choose from hearty cobb salad laden with bacon and cheese or citrusy salmon with avocado salad. Have a plethora or basil on hand? Our Ligurian chicken salad is swimming in pesto, making it the ideal meal when your garden (or CSA) is packed beyond capacity.
1) Ligurrian Chicken Salad with Peaches
One of Liguria’s biggest culinary contributions comes from this area’s passion for basil and penchant for pesto, which are the inspiration for this hearty salad. Two elements of this recipe use this Ligurian specialty: the roasted chicken breasts and the vinaigrette, which infuses all the fruits and vegetables with an herbaceous pop.
2) Gado Gado
Gado Gado, in Indonesian, literally means ‘mix-mix’, and that is exactly what you’ll be doing when pulling up to the table to enjoy this deliciously hearty salad. A plethora of veggies (green beans, cabbage, carrots, cucumbers, and radishes) act as the base for this dish. Savory tempeh is slathered in a sweet-spicy peanut sauce and broiled a beautiful golden brown.
3) Summer Steak Salad
For a fresh and flavor-packed meal, try our recipe for summer steak salad, bursting with tangy cherry tomatoes, sweet corn, and savory steak.
4) Melon & Corn Salad
Come summer, farmers’ markets are bursting with produce so fresh that they need little cooking to taste great. The majority of ingredients in this recipe are left raw to let their fresh flavors shine. A generous serving of burrata adds creaminess to all the fresh and crunchy components. This salad is creamy, crunchy, salty, sweet, and the perfect representation of summer’s bounty.
5) Cobb Salad
For this version we have kept it pretty classic with tomato, bacon, eggs, chicken, avocado, and cheese, but we did add some green beans to flex the power of Suvie’s steamer. Luckily, the eggs and the chicken cook at the same temperature, so they can go in the same pan to streamline the process.
6) Salmon with Citrus and Avocado Salad
This easy breezy dinner is packed with fresh and vibrant flavors, perfect for when citrus is in season. We used millet in this recipe because it’s light and fluffy and readily absorbs the bright flavors of the dressing, but you could substitute quinoa or bulgur if you prefer.
