This easy and elegant side dish features a flavorsome salsa verde made with parsley, scallions, capers, and lemon zest. To maintain the crisp texture of the broccoli, we recommend spreading the salsa verde onto the bottom of the serving platter instead of spooning it on top of the broccoli.
Crisp Air Fry Broccoli with Salsa Verde

Ingredients
- 1 lb broccoli florets
- 2 tsp vegetable oil
- 1 cup parsley
- 4 scallions, cut into 1-inch pieces
- ¼ cup olive oil
- 1 tbsp capers
- 1 lemon, zested
Directions

1) In a large bowl, toss together broccoli florets, 2 tsp vegetable oil, ½ tsp kosher salt, and ½ tsp ground black pepper. Divide broccoli between 2 Suvie air fry baskets and place in Suvie, ensuring the roasting racks are in place underneath to catch any drips.

2) Input settings and cook now or schedule.
Suvie Cook Settings
Bottom Zone: Air Fry at 350°F for 13 minutes
Top Zone: Air Fry at 350°F for 13 minutes

3) Meanwhile, place parsley, scallions, and capers into the bowl of a food processor. Pulse 8-10 times until chopped, scraping down the bowl as needed. With the motor running, slowly stream in ¼ cup olive oil until combined, about 20 seconds until a rough paste forms. Add the lemon zest and pulse a couple times to incorporate.

4) Spread salsa verde over the bottom of a serving platter. Remove broccoli from Suvie, scatter over the salsa verde, and serve.
