Glazing chicken breasts with apricot preserves is an easy and delicious way to dress up your weeknight dinners. We add fresh thyme leaves and lemon zest to add extra brightness and herbaceousness. Serve the chicken with a side of potatoes, over a fresh salad, or stirred into pasta. Note: depending on the size of your chicken breasts, you may need to increase or decrease the initial cooking time by a few minutes.*

Easy Apricot Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • ½ cup apricot preserves
  • 1 tsp lemon zest
  • 1 tsp fresh thyme leaves

Directions

1) Pat chicken dry and season with 1 tbsp olive oil, 1 tsp kosher salt and ¼ tsp ground black pepper. Divide chicken between 2 greased Suvie roasting racks (handles facing up) set within two Suvie pans. Place pans in Suvie, input settings and cook now.

Bottom Zone: Roast at 400°F for 12 minutes*

Top Zone: Roast at 400°F for 12 minutes*

2) Meanwhile, in a small bowl, stir together 1/2 cup apricot preserves, 1 tsp lemon zest, and 1 tsp fresh thyme leaves. Microwave on high until runny, about 30 seconds. Set aside. 

3) Once the chicken has roasted, remove the pan from Suvie, flip chicken over, and brush with reserved apricot glaze. Return pans to Suvie, input settings and cook now.

Top Zone: Roast at 400°F for 15 minutes

4) Remove pan from Suvie, set chicken aside to rest for 4 minutes, then slice against the grain into pieces and serve.

The instructions call for 1/2 cup apricot preserves but the recipe calls for 1/4 cup
