Meal Card: Chicken Piccata with Farfalle & Green Beans

This weeknight favorite stars tender chicken breast set atop farfalle bowtie pasta, drizzled in lemony piccata sauce complete with bites of umami-rich capers. We round out the meal with a side of verdant green beans, seasoned and roasted until crisp-tender.

Ingredients

  • 1-2 trays chicken piccata
  • 1-2 packages green beans

Directions

1A) For 2-Servings

Remove plastic from the chicken piccata tray and place in a Suvie pan. Place pan in the top zone of Suvie.

2A) Before opening, gently tap green beans on the counter to break apart. Open green beans and add to a second Suvie pan. Season with 1 tbsp olive oil, 1/4 tsp salt and freshly ground pepper. Place pan in the bottom zone of Suvie. 

1B) For 4-Servings

In a large bowl, stir together both packages of green beans, 2 tbsp olive oil, 1/2 tsp salt, and freshly ground black pepper. 

2B) Remove plastic from the chicken piccata trays and place each in a Suvie pan. Evenly distribute green beans next to the chicken piccata trays. Place pans in Suvie. 

3) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 25 minutes (for 4 servings, Roast at 350°F for 45 minutes)

Top Zone: Roast at 350°F for 45 minutes 

4) When the cook is complete remove pans from Suvie. Divide chicken piccata and green beans between plates. Season to taste with salt and pepper.

This was my first cook in my Suvie+ and I was super disappointed. After the 45 minutes of cook time from frozen, the chicken piccata was still partially frozen. So the green beans were ready to eat (although not that hot) and I still had to add more cook time to the other tray. Even after another 15-20 minutes, I had to just plate it and heat it up in the microwave. The chicken was rubbery and the whole dish was quite salty.
