We kept the filling straightforward with just four ingredients making prep time quick and simple but sacrificing none of that New York-style cheesecake flavor. Classic Cheesecake

Ingredients

  • ¼ cup (½ stick) unsalted butter, melted
  • 1 cup crushed graham cracker crumbs
  • 1 tablespoon granulated sugar
  • ⅛ teaspoon salt
  • 16 ounces cream cheese, room temperature
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh mixed berries

Directions

Make the Crust

1) Make an aluminum foil sling by taking two pieces of foil and placing them perpendicular to each other in a Suvie pan. Ensure the foil extends beyond the two long sides of the pan. Spray pan with cooking spray.

2) In a large bowl, stir together melted butter, sugar, salt, and graham cracker crumbs. Press the graham cracker mixture into a flat, compact layer in the bottom of the prepared pan (the bottom of a measuring cup works well).

3) Place pan in the bottom zone of Suvie. Roast at 400°F for 10 minutes, or until golden brown and fragrant. Set aside to cool to room temperature.

Make the Filling

4) Using a handheld mixer, beat together cream cheese, sugar, and vanilla in a large bowl until well combined. Scrape sides of the bowl down with a rubber spatula. Add eggs one at a time and beat on low until just combined.

5) Pour cream cheese mixture over cooled graham cracker crust.

6) Return pan to Suvie, input settings, and cook now or schedule.

Bottom Zone: Slow Cook Low for 2 hours

6) When the cook is complete, let cheesecake cool at room temperature for 1 hour then cover and refrigerate until completely set, 4 hours to overnight. Remove from pan using the aluminum sling. Cut into slices and top with fresh berries.

Coffee from the Indonesian region are spicy, herbal, and smooth, this makes them a perfect counterpoint to the sharper notes of this cheesecake. We recommend pairing this recipe with some freshly brewed Sumatran coffee.

For someone who avoids making cheesecake, this is a full proof recipe! No water bath, no cracked top! The flavor and texture were perfect. I’m excited to try some of the other cheesecake recipes.
