Crispy, juicy chicken thighs are our love language. Rendered until shatteringly crisp and then roasted until cooked through, these thighs will liven up any meal. This recipe can easily be doubled to feed more folks, simply sear in a large skillet and then split the thighs between two Suvie pans when roasting.
Super Simple, Super Crispy Chicken Thighs
Ingredients
- 1 lb bone-in, skin-on chicken thighs
- 1 tsp kosher salt
- ½ tsp ground black pepper
Directions
1) Season chicken all over with 1 tsp kosher salt and ½ tsp ground black pepper. Place chicken skin-side down in a cold, heavy bottomed skillet. Turn heat to medium and cook until fat is rendered and skin is crisp, about 8 minutes.
2) Remove skillet from heat and transfer chicken skin-side up to a Suvie pan. Place pan in the bottom zone of Suvie, input settings and cook now or schedule.
Suvie Cook Settings
Bottom Zone: Roast at 325°F for 18 minutes
Top Zone: None
3) Remove pan from Suvie. Transfer chicken to a platter and serve.
