Zaalouk is an easy, delicious, and healthy Moroccan cooked eggplant and tomato dish with the bold flavors of cumin, paprika, and garlic. Zaalouk is usually served as a salad or dip. We’ve plated our version as an appetizer and served it with cold and crisp sides to help scoop up every last bite. While this dish is traditionally served as a warm dip to start the meal, it can also be enjoyed over rice or alongside meats and vegetables, such as our Moroccan Spiced Beef Kofta or Spicy Moroccan Shrimp Bowl.
Zaalouk (Moroccan Eggplant Dip)

Ingredients
- ½ yellow onion, finely chopped
- 4 cloves garlic, grated
- 3 tbsp olive oil
- 2 tbsp tomato paste
- 1 ½ tsp cumin
- ½ tsp hot paprika
- 3 cups eggplant, peeled and cut into ¼” cubes
- 3 ripe vine tomatoes, cut into ¼” cubes
- 2 tbsp roughly chopped fresh cilantro
- 1 lemon, cut into wedges
- ½ baguette, thinly sliced
- 1 cup sliced cucumber, thinly sliced
- 1 cup sliced radish, thinly sliced
- 1 cup sliced orange bell pepper, thinly sliced
Directions

1) Combine ½ yellow onion, 4 cloves garlic, 3 tbsp olive oil, 2 tbsp tomato paste, 1 ½ tsp cumin, ½ tsp hot paprika, ¼ tsp salt, and ¼ tsp pepper in a Suvie pan. Place pan in Suvie and broil for 15 minutes or until golden brown.

2) Remove pan from Suvie. In a large bowl, combine the broiled vegetable mix with 3 cups eggplant and 3 tomatoes. Return mixture to the Suvie pan. Insert the pan into the bottom zone of your Suvie, input settings, and cook now.

Suvie Cook Settings
Bottom Zone: Roast at 400°F for 1 hour
Top Zone: None
3) After cooking, remove pan from Suvie and mash contents with a potato masher or fork. Season to taste with salt and pepper.

4) Garnish with 2 tbsp cilantro and serve with lemon wedges, half a baguette, 1 cup sliced cucumber, 1 cup sliced radish, and 1 cup sliced orange bell pepper.
