Zaalouk is an easy, delicious, and healthy Moroccan cooked eggplant and tomato dish with the bold flavors of cumin, paprika, and garlic. Zaalouk is usually served as a salad or dip. We’ve plated our version as an appetizer and served it with cold and crisp sides to help scoop up every last bite. While this dish is traditionally served as a warm dip to start the meal, it can also be enjoyed over rice or alongside meats and vegetables, such as our Moroccan Spiced Beef Kofta or Spicy Moroccan Shrimp Bowl
