Molten chocolate cakes are a classic dessert that combines the rich flavors of chocolate with a soft center. These individual cakes are perfect for special occasions or when you’re craving something decadent and chocolatey.

Molten Chocolate Cakes

Ingredients

  • 4 tbsp salted butter, plus extra for greasing 
  • 2 ½ oz unsweetened baking chocolate, chopped 
  • 2 large eggs
  • 1 egg yolk
  • ½ tsp vanilla extract
  • 7 tbsp granulated sugar
  • 1 tbsp all purpose flour

Directions

1) Grease cocottes with butter and coat with flour or cocoa powder, tapping out excess. 

2) Place butter and unsweetened baking chocolate in a large heat proof bowl. Microwave at 50% power for 1 minute. Stir and then microwave for 1 minute more at 50% power until smooth. Set aside. 

3) In the bowl of a stand mixer fitted with a whisk attachment, combine eggs, yolk, sugar, and a pinch of salt. Whip on high speed until pale and fluffy, about 5 minutes. Transfer egg mixture to bowl with chocolate. Sprinkle flour over the egg mixture. Gently fold everything together until combined. 

4) Divide mixture between the prepared cocottes. Place cocottes in a Suvie pan or on a Suvie roasting pan. Place in the bottom zone of Suvie. Input settings and cook now.

Suvie Cook Settings

Bottom Zone: Bake at 350°F for 15 minutes (for Suvie 2.0, Bake at 400°F) 

Top Zone: None

5) Remove cocottes from Suvie. Serve with whipped cream, berries, or powdered sugar.
