Quick, easy, and delicious, these air fried fingerling potatoes make a great side dish for a variety of meals. We finished our potatoes with chopped parsley, but cilantro, basil, chives, tarragon, cilantro, or a combination, would also taste great.

Air Fry Fingerling Potatoes

Ingredients

  • 1 ½ lbs fingerling potatoes, halved 
  • 1 tbsp olive oil
  • 2 tbsp chopped herbs 

Directions

1) In a large bowl, toss together fingerling potatoes, 1 tbsp olive oil, 1 tsp kosher salt, and ½ tsp ground black pepper. 

2) Divide potatoes between two Suvie Air Fry baskets in an even layer. Place baskets in the top and bottom zones of Suvie. Place sheet pans in each zone beneath the baskets to catch any drips. Input settings and cook now or schedule. 

Suvie Cook Settings

Bottom Zone: Air Fry at 375°F for 35 minutes 

Top Zone: Air Fry at 375°F for 35 minutes 

3) After the potatoes are done cooking, transfer to a platter and season to taste with salt and pepper. Sprinkle with 2 tbsp herbs and serve.
