This satisfying, Tex-Mex-inspired Breakfast Burrito Casserole takes the hearty flavors of a classic breakfast burrito and transforms them into a simple, crowd-pleasing bake. Ingredients

  • 8 large eggs
  • 6 oz shredded pepperjack cheese
  • 1 can Ro-tel, drained 
  • 1 (15 oz) can pinto beans, drained and rinsed 
  • 1 avocado
  • 1 lime, quartered
  • ¼ cup cilantro leaves

Directions

1) In a large bowl, whisk together 8 large eggs and 1 tsp salt. 

2) Stir in pepper jack cheese, pinto beans, and ro-tel. Grease a Suvie pan and pour the mixture into the prepared pan. Place in the bottom zone of Suvie. → Hold the Tap to Scan tag to the logo on the appliance, rotating the pan halfway through cooking

Suvie Cook Settings

Bottom Zone: Bake at 350°F for 40 minutes 

Top Zone: None

3) Remove pan from Suvie. Set aside to cool for 5 minutes. Cut into squares and served with cilantro leaves, avocado, and a squeeze of fresh lime juice.
