Our buttery couscous with feta and herbs is the perfect side dish for any occasion. Couscous cooks up quickly and easily in Suvie and is fluffed and finished with a drizzle of melted butter and fresh lemon juice. A shower of fresh herbs and a generous helping of salty crumbled feta adds depth of flavor to this delicious dish. 

Buttery Couscous with Feta & Herbs

Ingredients

  • 1 cup couscous 
  • 1 ½ cups water
  • 2 tbsp melted butter
  • 1 tbsp lemon juice
  • ¼ cup chopped fresh dill
  • ¼ cup chopped fresh parsley 
  • ½ cup feta, crumbled

Directions

1) In a Suvie pan, stir together 1 cup couscous, 1 ½ cups water, and ½ tsp salt. Place pan in the bottom zone of Suvie, input settings and cook now.

Suvie Cook Settings

Bottom Zone: Roast at 400°F for 15 minutes 

Top Zone: None

2) Once the couscous has finished cooking, remove from Suvie and fluff with a fork. Stir in 2 tbsp melted butter, 1 tbsp lemon juice, ¼ cup fresh dill, and ¼ cup fresh parsley. Transfer to a serving platter and top with ½ cup feta. Season to taste with salt and pepper, and serve.
