Cheesy Potato Hashbrown Bake

This recipe brings together fluffy eggs, gooey cheese, and potato hash browns for a delicious start to your day. Suvie is ideal for preparing breakfast because you can assemble everything the night before and have your meal ready when you wake up. If you want to schedule this cook and don’t want to wait for the broiler to cool before refrigerating, we recommend sauteing the onion and oil in a small skillet for 6 minutes over medium heat until golden brown instead of broiling in the first step. 

Note: This recipe can easily be doubled, simply divide between two Suvie pans.

Ingredients

  • 2 cups frozen, shredded hash browns 
  • ½ cup finely chopped onion
  • 1 tsp vegetable oil
  • 4 large eggs
  • 1 cup shredded cheese, such as mozzarella, cheddar, or monterey jack
  • 1 tbsp minced fresh chives
  • 1 tbsp hot sauce (optional)

Directions

Combine onion and vegetable oil in a Suvie pan, stirring to incorporate. Insert pan into one of the top zones of your Suvie and broil for 10 minutes, stirring halfway through cooking. 

In a large bowl, whisk together the eggs, 1 tsp salt, and ½ tsp pepper until thoroughly combined.

Remove onions from your Suvie and add to the bowl with the eggs. Stir in the shredded hashbrowns and cheese. 

Spray now-empty Suvie pan with cooking spray and then pour the potato mixture into the pan, smoothing the top with a spatula.

Insert pan into your Suvie, input settings, and cook now or schedule. 

Suvie Cook Settings

Bottom Zone: Slow Cook Low for 2 hours

Broil for 10 minutes then remove pan from your Suvie, run a knife around the edge to loosen, and invert onto a cutting board.

Cut potato bake into four pieces, divide between plates, and garnish with minced fresh chives and hot sauce if desired.

Note: If you would like to make this recipe in Suvie 1.0, insert pans into the top zones of Suvie, fill reservoir, and set to Slow Cook on Low for 2 hours.
