Chewy, sweet, and chocolatey, these sugar cookie bars turn the classic version on its head. The bitter cocoa powder perfectly balances the sweetness in the bars and adds additional depth of flavor alongside brown sugar, which lends a malty, warm flavor to the bars.

Chocolate Sugar Cookie Bars

Ingredients

  • 1 ½ cups all purpose flour
  • ⅓ cup cocoa powder
  • ¾ tsp baking soda
  • ½ tsp kosher salt
  • 12 tbsp unsalted butter, cubed & softened
  • 1 cup packed brown sugar
  • 1 large egg
  • ½ tsp vanilla extract

Directions

1) Grease a Suvie pan and line with parchment paper. In a medium bowl, whisk together 1 ½ cups all purpose flour, ⅓ cup cocoa powder, ¾ tsp baking soda, and ½ tsp kosher salt.

2) In the bowl of a stand mixer fitted with the paddle attachment, beat 12 tbsp butter and 1 cup dark brown sugar on medium speed until light and fluffy, about 2 minutes. Scrape down sides of bowl and add egg and ½ tsp vanilla extract. Return to medium speed and beat until combined, about 1 minute more, scraping down the bowl as needed.

3) Stop mixer and add flour mixture to stand mixer. Mix on low speed until combined, scraping down the bowl as needed. 

4) Transfer mixture to prepared pan, pressing into a flat, even layer. Place pan in the bottom zone of Suvie, input settings and cook now or schedule. 

Suvie Cook Settings

Bottom Zone: Bake at 350°F for 25 minutes (for Suvie 2.0, Bake at 400°F for 25 minutes)

Top Zone: None

5) Remove pan from Suvie and allow bars to cool in the pan. Remove bars with parchment sling, and cut into pieces.
