This Hawaiian recipe is the perfect blend of sweet, smoky, salty, and tangy. Traditionally, huli huli chicken is grilled; the word huli means “turn” in Hawaiian, and is a reference to the rotating of the meat over hot coals. In our recipe, rich chicken thighs and legs are slow cooked and then broiled to give the chicken its iconic charred look.

Ingredients

  • ½ cup ketchup
  • ½ cup light brown sugar, packed
  • ½ cup pineapple juice
  • ½ cup low-sodium soy sauce
  • ¼ cup fresh lime juice 
  • 4 garlic cloves, peeled and smashed 
  • 1 (1-inch) piece fresh ginger, grated
  • 4 bone in skin on chicken thighs
  • 6 chicken drumsticks

Directions

1) In a small saucepan combine ½ cup ketchup, ½ cup light brown sugar, ½ cup pineapple juice, ½ cup soy sauce, ¼ cup fresh lime juice, 4 smashed garlic cloves, and 1 piece grated ginger. Bring to a boil over medium high heat and cook until thickened, about 10-15 minutes. 

2) Meanwhile, pat chicken dry and season all over with kosher salt and ground black pepper. Divide chicken between 2 Suvie pans. Pour ⅓ cup sauce over chicken thighs, ⅓ cups over chicken drumsticks, reserving the remaining ⅓  sauce for Step 3. Place both pans in Suvie. Input settings and cook now.

Bottom Zone: Slow Cook on Low for 3 hours

3) Remove pans from Suvie and pour off liquid. Brush chicken with half of the reserved sauce and return pans to Suvie. Broil for 15 minutes, rotating pan halfway through cooking. 

4) Remove pans from Suvie, flip chicken pieces over and brush with remaining sauce. Return pans to Suvie and broil for 15 minutes more until chicken is browned and fragrant.

This recipe fails to mention that Suvie must be preheated. Also, although the chicken is in two pans it only mentions putting one pan in the Suvie and one pan cooking time.

It mentions turning on only the bottom, not the top for cooking. Are both top and bottom set for 3 hr slow cook?
