Indian Butter Chickpeas with Garlic Naan

The deliciously creamy vegetarian dish is the perfect balance of spiced (but not spicy) tomato sauce, tender chickpeas, and aromatic garlic naan. Heavy cream rounds out the bright flavors of the ginger, serrano, and tomato for a luxurious dish that only feels like it has spent hours simmering.

Ingredients

  • 2 tbsp unsalted butter
  • 1 cup finely chopped onion
  • 6 garlic cloves, minced, divided
  • 1 (1-inch) piece ginger, grated
  • 1 serrano or jalapeño chile, seeded and minced
  • 1 tbsp garam masala
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 (15 oz) can tomato puree
  • 1 tbsp sugar
  • 3 (15 oz) cans chickpeas, drained and rinsed
  • ½ cup heavy cream
  • 1 tbsp neutral oil such as canola or avocado
  • 2 pieces naan, cut in half
  • ¼ cup fresh cilantro leaves

Directions

1) Melt 2 tbsp butter in a medium skillet over medium heat. Add the onion, half the garlic, ginger, and chile. Saute until onion is browned, about 5 minutes.

2) Stir in garam masala, coriander, cumin, 1 tsp salt, and ½ ground black pepper, stirring constantly until fragrant, 1 minute more. Scrape mixture into a Suvie pan. 

3) Stir tomato puree, sugar, chickpeas, and cream into the onion mixture. Transfer pan to the top zone of Suvie. 

4) Transfer remaining minced garlic to a small microwave-safe bowl with 1 tbsp oil. Microwave on high for 30 seconds until bubbling, stirring halfway through cooking. Brush garlic oil over the naan, wrap in foil, and place in the bottom zone of Suvie. → Hold the Tap to Scan tag to the logo on the appliance.

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 minutes

Top Zone: Roast at 325°F for 45 minutes

5) Remove pans from Suvie. Stir chickpeas and season to taste with salt and pepper. Divide between bowls and top with cilantro. Serve with garlic naan. 

Chef’s Tip: To speed up your prep, use a food processor to first finely chop the onion before removing it and processing half the garlic, ginger, and serrano chile.
