For a simple, yet elegant weeknight meal, try our recipe for sweet and spicy pork tenderloin. First we sous vide the pork until it is perfectly cooked, then we coat it in a homemade spice rub, and sear it in a hot skillet until golden brown. Serve your tenderloin over rice, pasta, or polenta with a side salad for a complete meal.

Sweet and Spicy Pork Tenderloin

Ingredients

  • 12 oz pork tenderloin
  • 2 tsp vegetable oil 
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp brown sugar 
  • 1 tsp kosher salt
  • ½ tsp ground black pepper
  • ⅛ tsp cayenne pepper

Directions

1) Place pork tenderloin in a vacuum bag and seal. Place bag in a Suvie pan, and cover with water. Insert pan into your Suvie, input settings, and cook now or schedule.

Bottom Zone: Sous Vide at 135°F for 3 hours

Top Zone: Sous Vide at 135°F for 3 hours

2) After the cook, remove pork from vacuum bag and pat dry thoroughly. Combine chili powder, smoked paprika, brown sugar, salt, ground black pepper, and cayenne in a small bowl. Rub tenderloin all over with spice rub.

3) Heat vegetable oil in a medium nonstick skillet over medium-high heat until shimmering. Add pork and sear on all sides, 2-3 minutes total, until well browned and fragrant. Transfer to a cutting board. Slice into medallions and serve. 

Note: If you would like to make this recipe in Suvie 1.0, insert pan into the top right zone of Suvie, fill reservoir, and set to Protein to 135°F for 2 hours
