Busy weeknights call for quick and easy dinners that don’t skimp on flavor. Our salsa chicken is ultra delicious and is fast to prepare. Store bought salsa is a great weeknight meal hack for adding lots of flavor without a ton of work. Filled with vegetables, chicken, and cheese, this tasty meal is one the whole family will love. 

Salsa Chicken

Ingredients

  • 1 tsp ground cumin 
  • 1 lb bone-in, skin-on chicken breast
  • 1 red bell pepper, chopped
  • 1 jalapeño, finely chopped
  • 1 onion, finely chopped
  • 16 oz salsa
  • 6 oz shredded monterey jack or cheddar cheese
  • 2 tbsp chopped cilantro
  • 4 lime wedges 

Directions

1) Season bone-in, skin-on chicken breasts with ½ tsp salt, ½ tsp pepper, and 1 tsp cumin. 

2) In a Suvie pan, combine 1 chopped red bell pepper, 1 finely chopped jalapeño, 1 finely chopped onion, and 1 tsp salt. Place chicken on top of vegetables and then pour 16 oz salsa over the top. 

3) Place pan in the bottom zone of Suvie. Input settings and cook now or schedule. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 50 minutes

Top Zone: None

4) Remove pan from Suvie, shred chicken (discarding skin and bones) and stir back into salsa mixture.

5) Top with 6 oz shredded cheese and return pan to Suvie. Broil for 8 minutes until bubbling. Serve with cilantro and lime wedges.
