Just mix eggs and the fillings of your choice the night before, load up your Suvie, and in the morning you’ll have a perfect start to the day. Can’t finish it all for breakfast? No worries, frittatas make a great lunch too. For this frittata we’re using spinach and feta cheese for the filling, and topping it off with Parmesan cheese that gets a quick broil until it bubbles and browns. Buon appetito!
Spinach Feta Frittata
- 8 eggs
- ½ cup frozen chopped spinach, thawed and drained
- ¼ cup sour cream
- ¼ cup feta cheese
- 2-3 tbsp grated parmesan cheese
- Salt and pepper
Microwave the frozen spinach until thawed, then drain in a mesh colander and squeeze as much of the liquid out as you can.
Whisk the eggs until smooth and frothy, then add the sour cream and thoroughly whisk until smooth. Make sure there aren’t any clumps of sour cream, this will take a little time but it’s worth it!
Crumble the feta cheese into the eggs and add the spinach.
Fold in the fillings and season well with salt and pepper.
Pour into a Suvie pan. Load pan into Suvie, enter Slow Cook settings and cook.

Protein: LOW for 1 hour
Starch: 0 minutes
After the frittata is cooked sprinkle the top with grated parmesan cheese.
Broil until the cheese is browned and bubbling. Cut into pieces and serve.
