Whole Grain Pesto Chicken

For a nutrient dense meal that packs a punch, try our Whole Grain Pesto Chicken. Juicy chicken breasts are slathered with herby pesto and served atop our 9-Grain orzo blend studded with chickpeas, quinoa, carrots, and red bell peppers. A side of tender green beans adds a crisp crunch to this healthy meal.

Ingredients

  • 2 – 4 breasts Chicken 
  • 1 – 2 packets Pesto 
  • 1 – 2 packages 9-Grain Orzo Blend 
  • 1 – 2 packages Green Beans

Directions

1) Run pesto under warm water to thaw. 

2) Open chicken and place on the roasting rack (handles facing up) in a Suvie pan. Season with 1 tbsp olive oil, 1/4 tsp salt and freshly ground pepper (for 4 servings, season with 2 tbsp olive oil, 1 tsp salt, and freshly ground black pepper). Squeeze pesto evenly over the chicken breasts. Place chicken in the Top Zone of Suvie.

3) Before opening, tap orzo blend and green bean packages against the countertop to break up any large pieces. Open orzo blend and green bean, and add to a second Suvie pan. Season with 1 tbsp olive oil, 1/2 tsp salt and freshly ground pepper (for 4 servings, season with 2 tbsp olive oil, 1 tsp salt, and freshly ground black pepper). Place orzo and green beans in the Bottom Zone of Suvie.

4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 minutes (for 4 servings, Roast for 20 minutes)

Top Zone: Roast at 350°F for 24 minutes (for 4 servings, Roast for 34 minutes)

5) When the cook is complete remove pans from Suvie and set chicken aside to rest for 4 minutes. Stir orzo blend and green beans together and season to taste with salt and pepper. Divide between plates. After resting, divide the chicken between plates and garnish with any remaining pesto sauce.
